Over the past 10 years I have had countless clients show up at my restaurant and hand me packages of frozen game. It comes with the territory of being a chef, I suppose. Being a native Texan, I have always love preparing and eating wild game. As my own love for hunting and processing has started to grow, I have decided to take my 20 years of fine dining culinary preparations and apply them to processing and preparation. Unlike most processors, I will provide the unique cuts that chefs seek after and will take it a step further and offer various unique fully cooked stews, roasts, sausages, confit, burgers and much more, vacuum sealed and ready to eat.
